Quick and Flavorful Vinaigrette (from "Zingerman's Guide to Good Eating") Making your own vinaigrette is one of the simplest and tastiest recipes you can prepare. It's important to start with great tasting ingredients so pick your favorite vinegar, olive oil, and mustard from your pantry and give it a shot! You'll find that some flavors work better with others, but here's a nice combination to get you started on the right foot. 2 tablespoons Banyuls or 25 year aged sherry vinegar 1 generous tablespoon of Dijon mustard 6 tablespoons of olive oil, your favorite In a medium bowl, whisk the vinegar into the mustard until fully blended. Slowly add the oil, whisking constantly, until velvety smooth. Whisk again just before serving. Pour over a fresh green salad or just cooked potatoes.
